Kochkurs "Kochen wie im Mittelalter"; Rückblick / Cooking Class "Cooking Like in Medieval Times"; recollection

Der Kochkurs am Sonntag, 08.07.2012, verlief sehr zufriedenstellend. Die 11 Teilnehmer waren sehr interessiert und wissbegierig bei der Arbeit und das Resultat waren sehr wohlschmeckende Gerichte. Alle waren begeistert und ich hoffe, dass jeder eine gute Zeit erlebt hat. Vielen Dank an die Teilnehmer für den problemfreien Ablauf und an die Mitarbeiter des FFM für die Betreuung. Falls sich der ein oder andere Teilnehmer auf meine Seite verirren sollte, so hinterlassen sie doch bitte einen Kommentar, wie sie den Kurs fanden und welche Verbesserungsvorschläge Sie eventuell hätten. Die Kommentare müssen zur Vermeidung von Spam-Einträgen zuerst von mir freigegeben werden, daher kann es kurz dauern, bis sie hier angezeigt werden.


The cooking class on Sunday, July the 8th 2012, was quite satisfactory. The 11 participants were very interested and eager for knowledge and the results were very tasty dishes. I hope every one had a good time. I want to thank the participants for the problem-free event and thanks to the staff of the FFM, too, for their care. If any of the participants reads this blog and wants to comment or to give me feedback on things I should change, feel free to do so. The comments have to be revised be me to take out spam entries, so it may take a short while till they are published here.

Kochkurs "Kochen wie im Mittelalter"; Menü/ Cooking Class "Cooking Like in Medieval Times"; Menu


Nach eingehender Überlegung und ersten Vorversuchen habe ich mittlerweile die Rezepte für den Kochkurs am 8. Juli ausgesucht. Dieses Mal widmen wir uns der gehobenen angel-sächsischen Küche des 14. Jahrhunderts. Die Gerichte stammen aus der in Manchester aufbewahrten Handschrift der „Fourme of Cury“ (Die Art und Weise zu Kochen), die einer Gruppe von Rezeptsammlungen diesen Titels zugehört, die sich vom 14. bis in das 16. Jahrhundert gewisser Beliebtheit erfreute und von der verschiedene Überlieferungsstränge existieren. Das hier verwendete Manuskript stellt zwar nicht die „Urquelle“, aber wahrscheinlich den ältesten erhaltenen Vertreter dar.

Drawen beans - Durchgetriebene Bohnen, passierte Bohnen mit Safran
Rapes in potage - Rüben oder Pastinaken in Suppe, Rüben in Fleischbrühe mit Safran
Ryse of fleysch - Reis von Fleisch(brühe), Reis in Mandelmilch-Safransoße
Mounchelet - Schafstopf, mit Ei gebundener Schafs- oder Kalbseintopf mit Verjus




After some consideration and test cooking I finally decided on the recipes for the cooking class on July 8th. This time we will focus on anglo-saxon cuisine of the 14th century. The dishes are taken from the Manchester manuscript of the “Fourme of Cury” (the Art/ Method of Cooking), which is one of a group of recipe collections sharing the same title somehow famous from the 14th to the 16th centuries. The group consists of several lines of tradition. The manuscript used here is not the original source for the group but it seems to be its oldest specimen.

Rapes in potage - Turnips or parsnips in meat soup with saffron
Ryse of fleysch - Rise in almond milk with saffron
Mounchelet - Mutton or veal stew with verjuice, thickend with eggs

Kochkurs "Kochen wie im Mittelalter"/ Cooking Class "Cooking Like in Medieval Times"

Am 08.07.2012 halte ich im Fränkischen Freilandmuseum Bad Windsheim wieder einen Kochkurs ab. Der Kurs soll um 18.00 Uhr beginnen und ca. um 22.00 Uhr enden. Er findet in der Baugruppe Mittelalter im Höfstettner Haus statt und kostet 60 €. 

Das Menü steht bisher noch nicht fest, wird aber rechtzeitig hier bekannt gegeben.
 
Die Anmeldung ist über das Fränkische Freilandmuseum Bad Windsheim über das Anmeldeformular  möglich. Informationen dazu können über info@freilandmuseum.de, das Kontakformular oder an der Museumskasse eingeholt werden.


On July 8th 2012 I will hold a cooking class at the "Fränkische Freilandmuseum" in Bad Windsheim, again. The class starts at 18.00 and will end about 22.00. It is held in the building ensemble "Mittelalter" in the "Höfstettener Haus" and costs 60 €.

The menu is not ready yet, but it will be posted here as soon as it is done.
