Kochkurs "Nur Kraut und Rüben? Kochen wie im Mittelalter" / Cooking Class "Just cabbages and turnips? Cooking like in medievale times."

Der Oktober rückt näher und damit auch der Kochkurs am 15.10. im Fränkischen Freilandmuseum Bad Windsheim. Der Kurs soll um 16.00 Uhr beginnen und ca. um 21.00 Uhr enden. Er findet in der Baugruppe Mittelalter im Höfstettner Haus statt und kostet 110 €. Im Preis inbegriffen sind ein dreigängiges Menü, Getränke und eine Kochschürze. Alle Rezepte wurden dem ältesten deutschsprachigen Kochbuch, dem "buoch von guoter spise" aus dem Würzburg des 14. Jahrhunderts entnommen.


Menü:

1. Ein mandelmus (Mandelgericht mit Apfelwürfeln)
2. von pasteden (Pastete mit Wildfüllung)
und ein spise von bonen (Bohnen mit Bier)
3. Ein guot gebackenz (Krapfen mit Käse-Speckfüllung)

Die Anmeldung läuft noch und es sind noch Plätze frei. Die Anmeldung ist über das Fränkische Freilandmuseum Bad Windsheim über das Anmeldeformular  möglich. Informationen dazu können über info@freilandmuseum.de, das Kontakformular oder an der Museumskasse eingeholt werden.

Da mit Feuer gekocht wird, wird gebeten keine Kleidung mit Kunstfasern zu tragen.

October is approaching and with it the cooking class on 15.10. at the "Fränkische Freilandmuseum" in Bad Windsheim. The class starts at 16.00 and will end about 21.00. It is held in the building ensemble "Mittelalter" in the "Höfstettener Haus" and costs 110 €. The price contains a menu of three courses, beverages and a cooking apron. All recipes are from the oldest cookbook in German language, the "buoch von guoter spise" (book of good dishes), compiled in Würzburg in the 14th century.

2. von pasteden (pastrie this time filled with beef, for the cooking class I will take game)
and ein spise von bonen (the beans dish posted on my blog)
3. Ein guot gebackenz ("Krapfen" [= fritters] with bacon and cheese filling)

Registration is still open and there are also still places available. Booking is possible with the registration form of the "Fränkische Freilandmuseum Bad Windsheim". Information is available through info@freilandmuseum.de, the contact form or at the box-office of the museum.

The cooking will be done with fire, so please don't wear any clothes made of synthetic fibers.

Anmerkungen zu den Transkriptionen / remarks on the transcriptions

Lesern, die an die Arbeit mit Originalquellen gewöhnt sind, wird es aufgefallen sein, dass die von mir erstellten Übertragungen nicht nach den gängigen Transkritptionsregeln erstellt wurden. Die Texte stellen vorerst nur einen Zwischenstand dar und wurden direkt aus meiner Datenbank übernommen. Zum Einen sind in den verwendeten Programmversionen (zuerst Windows Excell, dann OpenOffice.org Calc) nicht alle benötigten Sonderzeichen vorhanden. Zum Anderen habe ich durch das gewählte System versucht die grafische Gestaltung erkennbar zu machen. Außerdem hat sich das Vorgehen zur Auswertung für meine Zwecke am praktikabelsten erwiesen.
     Das Original enthält Korrekturen und Streichungen von zweiter Hand, erkennbar an andersfarbiger Tinte und einer anderen Handschrift. Diese wurden vorerst kommentarlos übernommen, da sie wohl den beabsichtigten Endzustand wiedergeben. Der Text wurde so nahm am Original wie möglich übernommen.

Readers used to working with original sources might have noticed, that my transcriptions do not follow the common rules for transcriptions. The texts represent a preliminary step and have been copied directly from my own data base. Firstly not all special characters were available in the programs I used (first Windows Excell, then OpenOffice.org Calc). Secondly I tried to show the graphic layout of the original. Finally this procedure has proved to be most useful for purposes of my analysis.
     The original contains corrections and deletions by a second hand which can be identified by the colour of ink and the handwriting. These have been incorporated without comments because they represent the final version. The text has been copied as close to the original as possible.
